
Jack-o-lanterns aren't the only way to use an orange pumpkin.
Tuesday I made a thick, yummy, beef and mango sausage stew.
Then, Wednesday evening I baked it in a hollowed out pumpkin for about one-and-a-half hours.
Once the pumpkin is cooked through and soft, you spoon out the stew and pumpkin together.
Very yummy!!
